When you speak up about climate justice, you're preachy. When you speak up for animals, you're judgy.⁣

It's tiring to constantly witness people projecting their insecurities on those who plead for justice. If you tend to feel uncomfortable, preached at, or judged when someone highlights the pain and suffering of others, and you proceed to center yourself by defensively responding with your own personal narratives that nobody asked for - first pause to ask yourself why you feel personally attacked to begin with.⁣

It is positively crucial that we listen to each other.⁣
⁣
When you hear someone painfully expressing their frustrations of oppression, do not angrily react by minimizing their experiences.⁣
⁣
When you see someone addressing white privilege and supremacy, do not defensively respond and make it about you.⁣
⁣
When you feel an urge to condemn the protesting, remind yourself that our nation and its museums were birthed out of looting and rioting, but because those in power are able to control the narrative in history books, these acts are conveniently labeled as discovery and revolutions.⁣
⁣
How different this world could be if we stopped listening to respond, and started listening to understand. I've learned that you can't be defensive and understanding at the same time. So please friends - remember that just because your experiences are not the same as others, that doesn't make them any less real for those going through it.⁣
⁣
Lastly, once you're made aware of an issue, you can no longer claim ignorance, and it is therefor your duty to further educate yourself and your community on matters you don't understand. Please do the research. Have the conversations. Talk to your kids. And by all means, don't let racism slide when you see it. "Be more than 'not racist' but actively anti-racist."⁣

Scallion is the fastest growing store-bought food Scallion is the fastest growing store-bought food I’ve regrown so far. No yard or patio? That’s ok. You don’t need one for this. Here’s how!⁣⁣

Next time you buy some scallions, spring onions, or green onions, don’t throw away the scraps!⁣⁣
⁣⁣
1. Cut a few inches or so above the root.⁣⁣
⁣⁣
2. Place the roots in a glass of water, and use the rest for cooking.⁣⁣
⁣⁣
3. Put the glass of water on your window sill so it can get some sun.⁣⁣
⁣⁣
4. Change the water out every couple days and thassit! In as little as a week, you’ll see it growing.⁣⁣

If you DO have access to potting soil, @mint2grow gave me a great tip - you can make your scallions last longer by planting them in a pot of soil. After about a week or so, I transferred mine to a pot, and they doubled in size. I plan to harvest them soon and continue regrowing them now that they have a permanent residence in my little pot.⁣⁣

In a bowl I mix together peanut butter for protein, cacao powder for superfood nutrition, maple syrup for sweetness, and a little bit of plant-based milk to make it creamy. I store this in a jar and use it on cinnamon bagels, apple slices, and toast.⁣

Easy right?! I like no-fuss, quick vegan snacks that taste good and pack a protein punch. And this one is as simple as it gets.⁣

Save this easy recipe for Chocolate Coconut Energy Save this easy recipe for Chocolate Coconut Energy Bites! 🥥🍫 I make batches of these to snack on before a workout. These are sweet, tasty, and energizing.⁣
⁣
For those who want to try these as a yummy vegan pre-workout snack, dates are the magical ingredient. Dates are packed with slow-burning carbs to fuel your workout. But you can eat these anytime of day for any reason! They’re so good I munch on these whenever I’m craving something sweet.⁣
⁣
📝 HOW TO MAKE:⁣
⁣
1. Soak 1 cup of pitted dates in a bowl for a couple minutes to soften them up a bit.⁣
⁣
2. In a food processor or blender, add 1 cup coconut shreds, 2-3 tablespoons cacao powder, and a pinch of sea salt.⁣
⁣
3. Blend until the texture is sandy or crumbly.⁣
⁣
4. Add in soaked dates - this is what’s going to give it that stickiness.⁣
⁣
5. Blend until you have a dough-like consistency (don’t over blend - it shouldn’t turn into a paste).⁣
⁣
6. Form the mixture into balls.⁣
⁣
If you want them to be less sticky, you can gently roll them into a little bit of cacao powder. It’ll kinda make em look like a powdered donut.Or if you don’t mind the stickiness, you don’t have to do that all. If you want to make these extra fun, you can even add some dark chocolate chips!⁣
⁣
No matter which method you choose, they’ll all be magical.⁣
⁣
These are especially fun to make with the kiddos, so if you’re a parent, try this out with your little ones!⁣

These are just a few store bought foods you can pl These are just a few store bought foods you can plant instead of throwing away. Food is expensive, so I challenge you to reduce your grocery bills by regrowing foods from scraps you'd normally toss!⁣

As a reminder, every month I challenge us to spend 30 days building up an eco-friendly habit. If you watch my stories, then you know the month of May is a #RegrowChallenge and I kicked it off with a sweet potato experiment. ⁣
⁣
Do you have anything on this list you can try regrowing?⁣
⁣
BEAN SPROUTS - Soak beans overnight in a jar with shallow water. Drain water in the morning. Place in container. Cover with towel overnight and rinse the next morning. Keep doing this until you see sprouts and they reach the size that you want.⁣
⁣
CELERY - Cut off bottom and lay in a bowl with a bit of warm water. Keep in direct sunlight. After a week, you will see leaves growing along the base. Then transplant in soil and let grow to full length.⁣
⁣
GARLIC - Pull one clove off and plant it, roots facing down in soil and direct sunlight. Once you see new shoots, cut shoots back and your plant will produce a bulb.⁣
⁣
GINGER - Plant a piece of ginger root in soil, buds facing up. You will see shoots and roots in about a week. Then you can pull it up and use again.⁣
⁣
LETTUCE - Put leaves in bowl with some water. Keep in good sunlight and mist leaves with water. When you see roots and new leaves appear, transplant in soil.⁣
⁣
ONIONS -  Cut root of onion off and make sure you leave about a half inch of onion. Cover lightly with potting soil and keep in a sunny area.⁣ ⁣
POTATOES -  Use potatoes that have “eyes” (sprouts) on them. Fill a bucket with soil and plant them with the sprouts facing up. Place in sun and keep soil moist. Potatoes are ready to harvest in 3-4 months.⁣

PUMPKIN - Spread the seeds out in a sunny area and cover with soil. You can also plant a whole pumpkin!⁣

SWEET POTATOES - Put part of sweet potato in water. Place in sunlight and change water every few days. Roots and sprouts will appear soon. Once sprouts reach about four inches, twist off and place in a container of water. When roots from this container reach about an inch, plant in soil.

🏡 Ever since my husband and I built our new house, I haven't felt like leaving it! I'm a former travel addict who unexpectedly fell in love with being at home. But for the first time in awhile, I wasn't in a rush to return. Being with my mom and sister in India felt like home in a way I never could have imagined and I look forward to the day we can do it again.⁣

🇲🇽 PS. Did you know Cinco de Mayo isn't widely celebrated in Mexico? It's more of an American tradition that was originally intended to be a way to honor Mexican culture. At some point it became commercialized with stereotypical costumes and caricatures of Mexicans instead. There are meaningful ways to celebrate Mexican customs without being culturally insensitive so let's all keep that in mind today! 💚
